I made my favourite nut free caramel slice for the last Wellness Retreat I held and also made some for my last workshop and the participants loved it!! It’s very sweet but has no white sugar so it’s a healthier alternative.
The second time I made it I added some Peppermint oil which I really loved but that is an option of course. If you are going to add the Essential Oil make sure you use the Young Living’s peppermint as this is a pure, therapeutic grade oil and it’s a culinary oil.

The Base is made up out 1 1/2 cups of plain activated buckwheat and 15 medjool dates. Just combine the who ingredients in a food processor. Keep mixing it until it’s evenly combined and so it’s sticking together when pressed. Then I press it into a lined 15 x 25cm tin and put it in the freezer for an hour or so.

After that I prepared the Caramel Layer which contains of 30 medjool dates, 2 tablespoons of coconut oil, 60ml water ( 1/4 cup water), 1 teaspoon of vanilla powder and a pinch of salt. I combine all these ingredients in a food processor and keep blending until it’s creamy and smooth. I then take the base out of the freezer and put this caramel layer on top and then return it to the freezer for doubt 4 hours.

I then prepare the Chocolate layer which contains of 100grams of cacao butter, 1/2 cup cacao powder, 1/4 cup maple syrup and 4 table spoons of coconut oil. I melt it over a double boiler and which is well.
The I take out the tin from the freezer and put the chocolate layer and return to the freezer for about 30 minutes. If you want to add a few drops of Peppermint oil – do it just before you our it on.

I return it from the freezer 30 minutes before slicing to allow the chocolate topping to thaw a bit. I slice it with a hot, sharp knife.

A lovely day in Melbourne

On Saturday the 6th of April I was up in Melbourne for the Young Living Live your Passion Rally. Me and a few other Young Living leaders had been planning for this event for a couple of months before hand. This day is all about sharing the passion we have for the Young Living lifestyle with all of our members and also any other people who want to come along.

It turned up to be such a lovely day. First of all it was so lovely to be surrounded with like minded people with huge passion to educate other people about wellness and essential oils.

The display table looked amazing with all the Young Living products and then we also had tables with lovely snacks and drinks. Everyone who came along certainly got spoilt as they also walked away with a FREE gift.

The best part of the day was when we got a surprise visit from Young Living’s general manager from Sydney – Kristen Tod and her husband. That was certainly a surprise! What a lovely one and what a pleasure. Everyone even got a chance to ask her questions. What an honour to have her coming to our event in Melbourne.

Stress – how do you react to it?

Stress – how do you react to it?

Stress….we all experience it at time.
Do you know the signs of stress?

Have you had times when you feel very stressed? I’m pretty sure you have. We all go through stressful times in our lives.

Life has its ups and downs and we just have to find ways of how to deal with them. It can be “interesting” to watch our bodies physical effects on “difficult or stressful” days. Do you think about what your thoughts are at the time and your feelings?

It can sometimes be helpful to “check” your body awareness.

Here is what you can do:

1. Be aware of the times when you are stressed or overwhelmed; how does it make you feel? What happens in your body when you feel this way?

2. Then observe your anxiety reactions; where do you start to hold the tension, what physical effect has it?

3. Watch your own reactions; what do you do with the feelings that occurred in your body when the stressful or overwhelmed event occurred?

4. If your “stressful” event made you recall a past unpleasant event – how did your body react and how did this make you feel?

5. Think about a time when you where hurt, either physically, mentally or emotionally; take notice in what body parts that feels tight and where you have stored that tightness.

By observing yourself and your reaction, and your body – you will notice how your physical and emotional sides are connected; hence you will become more BODY AWARE.

So if you are feeling a little stressed and overwhelmed, take some time to take a deep slow breath and observe the tension leaving your body.
